Baked Artichoke Dip

Crystal...this one's for you! I found it while cleaning out my recipe box.

15oz artichoke hearts
8oz cream cheese
1/2 cup Parmesan
1/2 cup mayonnaise
1/2 cup sour cream
2t lemon juice
1 green onion
2t minced garlic
cayenne
salt

Process artichokes, cream cheese, parmesan, mayo, sour cream and lemon juice until smooth. Stir in remaining ingredients. Salt and pepper to taste. Bake uncovered at 350 for 20-25 minutes.

Sweet Potato Lentil Stew

1 onion
5 cloves garlic
3 sweet potatoes
2-3 carrots
1 cup lentils
1 package button mushrooms
vegetable broth (follow directions for enough for 4 cups water)
curry powder
ginger powder
4 cups water
salt to taste
2T olive oil

Heat olive oil, saute garlic and onions with ginger and curry until onions are clear and slightly browned. Add all other ingredients, except mushrooms. Simmer for 30 -45 minutes. Add mushrooms and cook for 10 additional minutes. Salt to taste

I like to serve this dish with corn bread but it's great alone too.

I don't measure the curry and ginger, i'd say maybe a teaspoon of ginger and 2-3 teaspoons of curry. Play around with the amounts for a taste you like.

So I know i'm always asking my friends for their recipes and vice versa. I have recipes in like 5 different places on my computer alone *sigh* So instead of emailing and texting and printing and book marking recipes, how about we just put all those recipes on this blog and share them one time for everyone who we know!?!
